Riesling
Riesling can be dry or sweet. Establish where the bottle sits before deciding what to serve with it; the grape name alone will not settle the question.
Sweetness and freshness can coexist
A wine can taste sweet and still have pronounced acidity. If you dislike heavy-feeling sweet wines, compare both dimensions rather than rejecting Riesling as a category.
For chilli, check alcohol too
A little sweetness can help with chilli heat, while high alcohol can make the burn feel stronger. Look at the actual bottle’s sweetness and ABV. A dry Riesling and a sweet one are different choices for the same dish.
Find the information you need
For a sweetness preference, a producer description may be enough to narrow your choice. For a sugar calculation, you need an actual residual-sugar figure. Words such as dry and fruity cannot supply that measurement.
