Cabernet Sauvignon

Cabernet Sauvignon is a useful starting point for drinkers who enjoy structure in a red. Its tannin deserves as much attention as its fruit.

01

Understand the grip

Tannin is the drying sensation a red wine can leave on the gums. If that is what you enjoy in Cabernet Sauvignon, compare the tannin reading as well as body. A higher reading does not mean a better wine.

02

Serve it with enough substance

A structured red can work with a substantial meat dish. Think again if the plate is delicate or strongly chilli-hot. The preparation and your own preference matter more than following a grape-and-meat rule.

03

A decanter is not an obligation

A firm young Cabernet may benefit from some air, while an older bottle needs a different decision. Taste first and use the decanting guide to distinguish aeration from removing sediment. Avoid setting a long timer simply because the grape is Cabernet.
