Pauillac (Grand Cru Classé)
Pauillac, France
- Its body can stand alongside a substantial dish
- Its acidity offers a fresh contrast to richness
Choose Christmas wine around the menu you are serving. A seafood starter and roast beef are different questions; there is no need to make one bottle answer both.

Work back from the main course and its sauce. Decide whether a separate wine would help with the starter, then leave dessert until you know its sweetness. Keep an alcohol-free option available and plan quantities from the pours your guests choose.
A substantial roast is a useful setting for a structured red, if that is what you enjoy. Compare tannin and body, and include the gravy or sauce in the decision. The cut of meat alone does not settle the match.

For simply prepared seafood, start with freshness and moderate weight. Lemon butter or a cream sauce may need more body alongside the acidity. A white chosen for that course can be served separately from the wine for the roast.
Côtes-du-Rhône, France
Rich fruit, chocolate and sweet sauces need enough sweetness in the wine. A dry red can seem harsher beside them. If you prefer to keep the dinner wine, serve dessert on its own and return to the glass afterwards.
